Baked Potato Soup

Prep Time: 10 Minutes Cook Time: 25 Minutes ” Thick and creamy. Uses leftover baked potatoes. Allrecipes. This is one of those recipes that can turn out different everytime, depending on the graininess of the potatoes. I sometimes use cooked diced potatoes. I stir 1/2 in to soup at beginning and add remaining closer to end so some potatoes retain their bulk. Top with additional sour cream, onions, and bacon just before serving.

Cream Cheese Monkey Bread

Recipe from http://www.pipandebby.com/pip-ebby/2012/1/28/cream-cheese-monkey-bread.html. Would have been more appealing if done in bundt pan. I used country biscuits. Bought cherry pie filing and thought about hiding some in the the dough with the cream cheese.

This could be adapted for a Steak Diane sauce with the addition of worcestershire and sour cream.

KTL: If this is too sweet add extra cream cheese, or butter. So you don’t ruin your whole batch try “the fixes” on a small amount. OR try the Joy recipe, which is 6 oz cream cheese to 1 1/2 cup confectioner’s sugar, vanilla [rum or coconut extract] and coconut milk.

Pina Colada Cupcakes
