Baked Potato Soup

1 In a soup kettle or Dutch oven, melt the butter over medium heat. Stir in flour, and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. You can add water to thin the soup. If desired you can “mash” the potatoes into the soup.
2 Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper, and stir until cheese is melted.
Additional seasonings if desired: Onion salt, beef bouillon, to taste
