Rigatoni and Sausage with Roasted Red Pepper Sauce

Preheat oven to 400 F.

Mix first 5 ingredients in a bowl. Pour onto a cookie sheet and roast in oven for 25 – 35 minutes, or until just starting to char on the edges.

Cook bag/box rotini for 1 minute less than the instructions state.

Put ingredients 6 – 13 in a Vitamix (a blender should work). Add 1/2 – 2/3 of the roasted vegetables. Starting on Variable 1, slowly turn to Variable 10, then to High. Allow to blend on High for 5 minutes, or until steaming. Check for desired thickness, adding chicken stock and blending for 20 seconds more, if necessary.

Add remaining roasted vegetables and run blender on Variable 5 for 10 seconds.

Slice sausages lengthwise and then into half-moon slices.

Mix sauce, pasta, and sausages together. Serve with parsley and parmesan cheese
