Fried Egg Burritos

Preheat oven to 400 F. Lay bacon slices on cookie sheet and bake 10 – 15 minutes, or until they start to brown. Pull the cookie sheet out and pour the grease into a small bowl. Brush the slices of bacon with the maple syrup and bake for another 3 – 4 minutes.

While bacon is baking, warm the tortillas. Line the tortillas with the avocado and tomato slices and the cilantro.

Mix the chopped scallions with the sour cream.

Pour 1/4 of the bacon grease into a pan over medium-high heat. Fry an egg to your liking (runny or medium or hard yolk). Salt and pepper to taste.

Once bacon is done, crumble each slice into each of the tortillas.

Place a fried egg into each tortilla and top each with 1/4 of the sour cream mixture.

Enjoy!
