Cupcakes!

Today we had a small but absolutely fun and great tasting Cupcake Exchange Meetup. Members brought there own cupcakes and wow they were awesome!
I planned to make some caramel filled cupcakes but unfortunately this kitchen princess turns into a dragon when it comes to preparing caramel. It’s a matter of hit and miss. A couple of weeks ago, I wanted to make a caramel apple pancake and the caramel turned into a sugary disaster, all sugars crystallized, the day after I made the pistachio brittle for the chocolate tart and it turned out great. Today I wasted a two portions of “should be caramel” before I read some one’s tip to use a teaspoon of corn syrup. This turned out to be the “golden tip”.

With my apron still on, the kitchen a giant mess, I welcomed our guests who all brought the most beautiful cupcakes! We all tasted some and every one went home with a nice variety of cupcakes!
